Chocolate Caramel Cake with Ganache

The ganache (chocolate cream ) is made with a blend of Valrhona bitter chocolate Caraibe (66% cacao) & milk chocolate Jivara (40% cacao). The bitter-sweet chocolate flavor enhances the caramel sponge cake. The top is sprinkled with cacao nibs, and in addition, you can sprinkle Maldon sea salt which comes with the cake separately in a small bag.
Store the cake in refrigerator. When ready to serve, cut it into slices with a slightly warmed knife, while cold. Bring the slices to room temperature and you’re ready to enjoy!
