This galette is composed of three parts: The first layer is the flaky butter dough made with heirloom Sonora flour blend, the second is the almond cream and the third is the sliced pears which are poached in advance with star anise, lemon & orange peels, and cinnamon. All baked together in a 450F oven until crust is golden brown, and cooked almond cream appearing in between the roasted pears.
Best paired with your favorite scoop of Chocolate Ice cream.
