Apple galette was the first fruit galette-style pie I made when I moved to LA from New York City during the pandemic. For me, it was a simple act of assembling sliced apples on top of a vanilla- and spice-flavored apple compote and a Sonora flour pie dough. My sister, Sonoko Sakai, and her assistant were the first to taste it, and they loved the galette. We started taking pickup orders from her Highland Park kitchen through social media, which led to great success and was even featured in the LA Times food column in April 2021. Since then, it has become everyone's favorite among my seasonal galettes.

About the workshop: Fuyuko’s workshop begins with a demonstration by the instructor, followed by a hands-on activity for students. During the demonstration, students are welcome to touch and feel the components. Each student will assemble and bake one 7” galette to take home. The tasting includes a slice of apple galette and apple-cherry muffins served with tea. Enjoy learning in a home kitchen with a small group of students!

STEP 1: DEMONSTRATION & HANDS-ON

The teacher will show you how to assemble the apple galette using three pre-prepared components. Each student will assemble one 7” galette. Once all the galettes have rested, they will be baked in the oven. The demonstration will then continue, showing step by step how to make the pie dough, apple filling, and topping.

STEP 2: DEMONSTRATION – PIE DOUGH PREPARATION

The teacher will demonstrate how to prepare pie dough from scratch, explaining how to mix the ingredients and form the dough into a square shape. You will learn how to roll out the chilled dough into sheets and cut it into circles to ensure a uniform galette shape.

STEP 3: DEMONSTRATION – APPLE PREPARATION

The teacher will explain how to prepare apples for the compote and toppings. You will learn how to slice apples thinly for the compote—a method of cooking apples down with sugar and spices until they become soft and rich in color. This will serve as the galette filling.
For the topping, apples will be cut into thick slices and soaked in sugar and lemon juice before being used as a garnish for the galette.

STEP 4: DEMONSTRATION – APPLE MINI MUFFINS WITH STREUSEL

The teacher will demonstrate one additional recipe using the apple compote and cooked apples: Apple Mini Muffins with Streusel. Around this time, students’ galettes will be baked and ready to cool.

STEP 5: TASTING & Q&A TIME

Enjoy a slice of apple galette and a mini muffin, served with tea. This is also the perfect time to review the recipe and ask any questions.

Workshop hours:  9 am to 12 pm  (3 hours)

Class size: 1 to 4 students

Price: $200 per person

What students will receive: Hands-on finished items by students. We will provide you with a box to pack your Pear Tartlets.

What to bring: An apron, hand towel, indoor shoes with closed toes & soft soles, and a pen to take notes. (We will have water bottles for you but you are welcome to bring your own beverage.)

Waiver Form: Each student participating in the workshop is required to sign a waiver form. This form will be sent in the confirmation email. Once signed and submitted, it will automatically be sent to Fuyuko's Kitchen.
